Vanilla is undoubtedly one of the most popular spices in the kitchen, especially in confectionery. Its preciousness is given not only by its sweet aroma, but also by the processing of the plant: About 7 kilos of pods have to be processed in order to have 1 kilo of vanilla for culinary use. It is native to Mexico, but today the largest producer of vanilla is Madagascar, followed by Indonesia and China.
